Healthy nectarine cobbler because Friday—and just in time for tonight’s dessert This can be swapped with peaches, plums, apples, whatever you have on hand.
Healthy Fruit Cobbler
Chop up fruit of choice and set aside (I used 2 good-sized nectarines)
Crumble
1 cup oats (can be gf)
2 1/2 tbsp coconut oil
Handful chopped walnuts
Dash of vanilla extract
Lakanto maple syrup and golden monk fruit sweetener (or sweetener alternative)
2 tbsp full-fat yogurt
Combine crumble until evenly mixed. Mix in fruit and bake at 375 for 25 min.
